Date Scones

This is one of my own recipes that I haven't made in awhile. Great for morning or afternoon tea. I think they are pretty damn good, especially warm with butter and a cup of tea. Yum!


Ingredients:
1 cup of dates cut in half
2 cups of self-raising flour
1 teaspoon of baking powder
3 tablespoons caster sugar
50 g butter + 2 tablespoons
3/4 cup milk
teaspoon of butter
tablespoon of water

Method:
1. Pre-heat oven to 200 degrees C
2. In a pan with a tablespoon of water and a 1-2 teaspoons of butter, until dates are soft. Set aside to cool.



3. Put flour, sugar and baking powder in bowl
4. Work in butter with fingertips until it looks like fine bread crumbs.


5. Add in milk. Mix in well with a wooden spoon. It will be quite sticky.
6. Add in the the dates and mix together.

 

7. On a floured board, knead the mixture.
8. Add more flour as you knead, until it is a workable mixture. Don't use too much flour though, it will become tough.

 

9. Roll out to about 3 cm thick and cut into sections about 3cm wide.
10. Place close together onto a tray lined with baking paper and lightly dusted with flour.


11.Cook in a preheated oven for 12-15 minutes until pale golden in colour.
12. Remove from oven and cool.
