ANZAC Biscuits


ANZAC biscuits are something I make every year while watching the ANZAC day AFL game Essendon Vs. Collingwood. I am an Essendon supporter of course. For those that don't know, April 25th is ANZAC day, a day Australians (and NZ) commemorate our fallen soldiers who fought at Gallipoli during World War I. These days we use the occasion to remember all of our fallen soldiers and ANZAC biscuits are one of the ways we keep this tradition. If I'm not wrong, these biscuits originated when care packages were sent to the soldiers back in the day, and they needed a basic biscuit that would last the journey.

They are easy to make and very yummy.

Ingredients:
1  cup rolled oats 
1  cup plain flour 
3/4  cup caster sugar 
1  cup shredded/dessicated coconut 
125  g butter 
2  tablespoons golden syrup 
1  tablespoon boiling water 
1/2  teaspoon bicarbonate of soda 

Method:
Preheat the oven to 160c.
Place the oats,flour sugar and coconut in a bowl and stir to combine. Set aside. 


Place the butter and golden syrup in a small saucepan over a low heat and stir until melted and combined. 



Place the water and bicarbonate of soda in a bowl, stir to combine and quickly add to the butter mixture. 


Pour the butter mixture in with the oats mixture and stir until well combined.
Place small balls of the mixture onto baking trays lined with baking paper, allowing room for spreading.
Flatten slightly and bake for 10 minutes or until golden in colour. Allow to cool on cooling racks.

Date Scones

This is one of my own recipes that I haven't made in awhile. Great for morning or afternoon tea. I think they are pretty damn good, especially warm with butter and a cup of tea. Yum!


Ingredients:
1 cup of dates cut in half
2 cups of self-raising flour
1 teaspoon of baking powder
3 tablespoons caster sugar
50 g butter + 2 tablespoons
3/4 cup milk
teaspoon of butter
tablespoon of water

Method:
1. Pre-heat oven to 200 degrees C
2. In a pan with a tablespoon of water and a 1-2 teaspoons of butter, until dates are soft. Set aside to cool.



3. Put flour, sugar and baking powder in bowl
4. Work in butter with fingertips until it looks like fine bread crumbs.


5. Add in milk. Mix in well with a wooden spoon. It will be quite sticky.
6. Add in the the dates and mix together.

 

7. On a floured board, knead the mixture.
8. Add more flour as you knead, until it is a workable mixture. Don't use too much flour though, it will become tough.

 

9. Roll out to about 3 cm thick and cut into sections about 3cm wide.
10. Place close together onto a tray lined with baking paper and lightly dusted with flour.


11.Cook in a preheated oven for 12-15 minutes until pale golden in colour.
12. Remove from oven and cool.

Peanut Butter Shortbread Cookies

Ok so tonight I was sitting on the couch watching Enemy of the state (P.S How hot is Will Smith in this movie?!) and had a craving for something sweet to eat while watching the movie. The fact that I haven't been grocery shopping means I haven't really got anything in the fridge. Seriously, I don't even have eggs. So I thought I would conjure up something with what I had in the cupboard and fridge. That really meant flour, sugar, butter, peanut butter. That is how these crumbly babies were born. These are like the peanut butter version of melting moments/yo-yo's or whatever you want to call them, and they are seriously addictively delicious! I only made a small amount (about 12 biscuits) so double the quantities if you want more.



Ingredients:
1/4 cup brown sugar
1/8 cup white sugar
2 HEAPED tablespoons of crunchy peanut butter (I use woolworths select light crunchy peanut butter)
Approximately 50g of room temp butter (or enough to make the mixture just stick together)
1 teaspoon of vanilla extract
1/2 cup of Self-raising flour


Method:
Preheat the oven to about 200 degrees celcius.
I basically just added all the ingredients together in a mixing bowl and mixed them with a wooden spoon, then worked the mixture with my fingertips until all combined. I basically just kept adding small amounts of butter until the mixture was just able to just stick together (but not really sticking together like cookie dough does). I estimate in total it was about 50g but start small and work it up until it is the right consistency (sorry I never really measure!).
I then rolled small balls and flattened with a fork and placed them on a baking paper lined tray. They are a little crumbly still so be careful when handling.
Bake in the oven for about 8 minutes. Take out of oven and leave on tray for a couple of minutes, then transfer to a wire rack.
